Cenote is an ultra-premium 100% Agave Azul Tequilana Weber tequila inspired by the beauty of the Yucatan Peninsula and the spectacular underground water systems unique to this geographical region. Cenote tequila has a complex flavor profile that balances fragrant cooked agave with delicate wood notes.
Cenotes are natural swimming holes formed by the collapse of porous limestone bedrock, which has revealed a secret subterranean world of groundwater pools of crystal clear fresh water that has been meticulously filtered by the earth.
CENOTE® tequila is produced exclusively using 100% Blue Weber agave. The agave comes from Los Altos de Jalisco and the Tequila region. The pineapples that arrive at the factory are cut into two or four parts. We do not use a diffuser and the cooking is done for 10 hours in autoclaves, with the help of steam. A special yeast is added to the juice. It has been used since the beginning of the factory's operations and is one of the master distiller's best-kept secrets. Fermentation lasts up to 72 hours before the liquid can be distilled.
Distillation in double containers is done in stainless steel stills that allow the natural flavors of the 100% best agave to be preserved. The water used to mix CENOTE® tequila is filtered through Mexican silver to make it smoother and smoother. We are the first tequila brand that uses a process of these characteristics. Reposado tequila is matured in large French oak barrels for at least 2 months. The Añejo matures in used American oak barrels of 200 liters for more than 24 months.
